Ingredients
  

  • 4 medium potatoes peeled and diced
  • 1 lb beef sausage sliced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they become fragrant and translucent, about 3-4 minutes.
  2. Add the sliced beef sausage to the pot and cook until browned, stirring occasionally, for about 5-7 minutes.
  3. Stir in the diced potatoes, dried thyme, salt, and pepper. Mix well to combine all the ingredients.
  4. Pour in the chicken broth, bringing the soup to a gentle boil. Reduce the heat to low and let it simmer for 20 minutes, or until the potatoes are tender.
  5. Once the potatoes are cooked, stir in the heavy cream and shredded cheddar cheese. Cook for an additional 5 minutes until the cheese is melted and the soup is creamy.
  6. Taste and adjust the seasoning if necessary. Ladle the soup into serving bowls and garnish with fresh parsley if desired.

Notes

Storage & Reheating:
Store any leftover soup in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm on the stove over low heat, stirring occasionally until heated through. You can also microwave the soup in a microwave-safe container in short intervals, stirring in between.
Variations:
- Swap beef sausage for chicken sausage for a lighter option.
- Add vegetables such as carrots, celery, or spinach for added nutrition.
- For extra flavor, incorporate crushed red pepper flakes for a spicy kick.
- Use different types of cheese like pepper jack or mozzarella for varied flavors.
