Ingredients
  

  • 1 pound kielbasa sausage sliced
  • 1 bag 16 ounces frozen potato and cheese pierogi
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium onion sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced kielbasa sausage, frozen pierogi, broccoli florets, sliced red and yellow bell peppers, and sliced onion.
  3. Drizzle the olive oil over the mixture, then sprinkle the garlic powder, onion powder, salt, and pepper. Toss everything together until well coated.
  4. Spread the mixture evenly onto a large sheet pan in a single layer.
  5. Roast in the preheated oven for 25-30 minutes or until the sausage is heated through and the vegetables are tender, stirring halfway through the cooking time.
  6. Once cooked, remove from the oven and let it cool for a few minutes.
  7. Garnish with fresh parsley before serving.

Notes

Storage & Reheating:
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm in the microwave or on a stovetop over medium heat until heated through.
Variations:
- Swap the kielbasa for chicken sausage or turkey sausage for a lighter option.
- Add different vegetables such as zucchini, carrots, or snap peas based on your preference.
- Change the flavor profile by adding spices like paprika or Italian seasoning.
- Use homemade pierogi if you prefer a fresher taste.
