Ingredients
  

  • 2 pounds beef stew meat
  • 2 bell peppers red and green, sliced
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • Salt to taste
  • Cooked rice or noodles for serving

Method
 

  1. Prepare the vegetables by slicing the bell peppers and onion, and mincing the garlic. Set aside.
  2. In a mixing bowl, combine the beef broth, soy sauce, Worcestershire sauce, cornstarch, brown sugar, black pepper, paprika, and salt. Stir until well mixed.
  3. Place the beef stew meat at the bottom of the crock pot and top it with the sliced bell peppers, onion, and minced garlic.
  4. Pour the sauce mixture over the beef and vegetables in the crock pot, ensuring everything is evenly coated.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
  6. Once cooked, check the seasoning and adjust with additional salt if necessary. Serve the pepper steak over cooked rice or noodles.

Notes

Storage & Reheating:
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm in the microwave or on the stovetop until heated through.
Variations:
- Add fresh mushrooms for extra flavor.
- Substitute chicken for beef for a lighter option.
- Incorporate snap peas for added crunch and nutrition.
- Use a different sauce, such as teriyaki, for a unique twist.
