- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, sliced carrots, and diced celery to the pot. Cook for another 3-4 minutes until the vegetables start to soften.
- Season the vegetables with dried thyme, dried oregano, salt, and black pepper. Stir well to combine.
- Add the boneless chicken breasts to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes until the chicken is cooked through.
- Remove the chicken from the pot and let it cool slightly. Once cooled, shred the chicken using two forks.
- Return the shredded chicken back to the pot and stir in the heavy cream and frozen peas. Allow the soup to simmer for an additional 5-10 minutes until heated through.
- Taste and adjust the seasoning with more salt and black pepper if necessary. Serve hot, garnished with fresh parsley.
