Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 celery stalks diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, sliced carrots, and diced celery to the pot. Cook for another 3-4 minutes until the vegetables start to soften.
  3. Season the vegetables with dried thyme, dried oregano, salt, and black pepper. Stir well to combine.
  4. Add the boneless chicken breasts to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes until the chicken is cooked through.
  5. Remove the chicken from the pot and let it cool slightly. Once cooled, shred the chicken using two forks.
  6. Return the shredded chicken back to the pot and stir in the heavy cream and frozen peas. Allow the soup to simmer for an additional 5-10 minutes until heated through.
  7. Taste and adjust the seasoning with more salt and black pepper if necessary. Serve hot, garnished with fresh parsley.

Notes

Storage & Reheating:
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm the soup on the stove over low heat, stirring occasionally until heated through. Add a splash of water or additional broth if the soup thickens.
